倫敦東北面小區London Fields咖啡遊

Last trip to London we have visited their original store in Shoreditch, and after 4 years, we are now at their new branch on Emma street In London Fields!

Designed by Box 9 design limited, the new outlet is brightful inside with the use of light-coloured birch plywood, light grey concrete coffee counter topped with one monolithic piece of stainless steel. The shopfront is painted in a sharp but low-profile emerald green, which was referenced to the color of the old Norwegian fishing net.

在倫敦喝咖啡的應該都會認識ozone
（雖然ozone其實來自紐西蘭）
上一次來倫敦到訪過ozone coffee 在shoreditch的本店
疫情後到訪已經擴展了第二間位於london fields的分店
店設計由他們一直沿用的Box 9 design
敞大的倉庫改裝後除了有用餐位置，亦有wood-fired pizza oven和酒吧
比起shoreditch店室內設計亦光猛很多
走工業風的簡約設計
用上淺木色、淺灰混凝土和寶綠色
店面的寶綠色來自漁民捕魚的魚網顏色
原來店內的綠色椅子來自snohetta設計的S-1500椅子，椅子物料亦來自挪威回收的魚網～
這和ozone重視環境保育有關
他們剛剛也獲得B Corp認證

咖啡偏深焙nutty風味
老實說奶啡不太合口味
不過ozone的食物種類算很多
Egg benedict 配薯餅（Bubble and squeak）不錯
難怪週末來到要排隊⋯
想不到來到倫敦去咖啡店都要排隊哈哈

LAYLA BAKERY

Stepping into the bread heaven!
Using wild grains, the famous layla bakery is the favourite neighbour bakery around Notting Hill. We arrived two minutes before it opens on weekends, and there were already people queuing!

Layla bakery實在是一個太可愛的地方了
來之前已聽過很多好評
到真正來到才感受到它的魔力
週六我們已經在開店前五分鐘來到
已經有街坊在排隊等買麵包

剛好早上太陽灑入店內
把排得整齊的牛角包照得金光閃閃！
裡面有一張大木枱配上淺粉米色牆
除了設計令人感到很休閑舒服
這裡的人和環境也令人想放慢腳步
在倫敦其中一個高尚住宅區
確切地感受到這裡的街坊確實很發自內心的快樂（尾圖）
有帶小朋友的也有帶狗狗的

至於包包
好開心有三款咸包
Bacon jam & spring onions 有家鄉蔥油包的感覺但麵包酥皮富有牛油香
非常好吃！

從喝咖啡看倫敦的建築保育
Tucked away from the main streets, this hidden gem is standing on ground floor of the grade historical II building of Fredrick's Place in central london. Nice coffee and good food!

在倫敦城（city of london）基乎每棟建築都是歷史建築物
單單在倫敦城便已經有近600棟listed buildings
如果需要改建這些歷史建築便需要向政府申請

這間咖啡店wheres freds 位於bank station 五分鐘步行範圍內的fredrick's place
整個建築群在十八世紀建成
已被列為grade II 歷史建築
而整個區域亦位於guildhall conservation area 保育區（圖10）
2020年完成翻新後成為辦公室和咖啡店
而這間咖啡店where's fred 也是這組建築群的大業主the mercers' company擁有的

平日早上九點到bank station一帶
基本上上班人潮像中環一樣
雖然位於極中心的位置
但where's freds 隱身於一條寛巷的盡頭算是鬧市中的一片恬靜

咖啡店走day-to-night concept
早上喝咖啡晚上喝酒
餐牌上brunch食物種類不算多
友人推薦的truffle egg croissant 很不錯
Fred's granola 用上自家制的granola 配上新鮮水果
Granola是偏thick的質地
所以也就可以像雪糕球一樣上碟
Banana bread烘熱後加上焦糖香蕉和greek yogurt 也是另一個必試item!

想不到要認識英國建築保育可以由一杯咖啡開始。

來到倫敦幾乎每天都在吃麵包
位於東倫敦london fields 附近的pophams bakery
咖啡使用同樣在東倫敦有roastery 的ozone coffee
下午四點多來到所有麵包都賣完了
幸好還有jalapeño cream cheese sourdough sandwich
非常非常好吃麵包chewy 麵包邊邊也不會太硬

咖啡店設計簡約
由英國建築studio nothing is nothing設計
使用大量圓角和圓弧線條令這個小小的空間顯得特別溫柔
白色有limewash texture牆身特別找來bauwerkcolors 處理

從咖啡到保育和集資開店
This trip to london opened my mind honestly!

If we talk about sustainability and urban upgrades, Watchhouse maltby street , together with many other small shops, occupied the left-over arch spaces from the london railway and successfully revived the area into a hip and trendy place to hangout on weekends.

If we wanna talk about business models for coffee shops, Watchhouse has successfully launched their very first crowd-funding in UK. With over £3 million received, they have raised way more than their target sum to expand their outlets outside london. Impressive! Will we see this business model in the future here in HK?

今次來倫敦確實有點大開眼界
可能太久沒有旅行感受很深

上一篇寫where's fred 也有深入淺出的介紹『由喝咖啡看建築保育』
今次watchhouse 除了有保育元素外
到訪時他們正在集資crowd-funding 開分店
這個商業模型讓顧客有如你和我也可以變成他們的投資者
短短幾日已集資了三百萬（是目標金額的三倍）
集資目的是讓他們擴展到倫敦以外開店
Crowd-funding/ kickstarter 絕對不是新鮮事
不過咖啡店集資開分店還是第一次親身感受到
不知道在香港又是否可行？

至於建築保育方面
這種鐵路結構下的拱門空間活化在英國也滿常見的
能夠成功賦予「無用途」空間一個新意思
正如這間watch house位處的maltby street market
市集正正沿着軌道發展
不同類型的小店、食物車、farmer's market、酒吧和咖啡店進駐各個拱門空間
週末來到這一帶人潮也很多
而其實watch house前身也是另一家鼎鼎大名的Monmouth coffee

咖啡店室內設計用上紅色terracotta磚砌牆舖地
呼應着本身也是磚結構的路軋建築
U型吧台後是玻璃牆
好讓顧客也能看到店後的炒豆設施和過程
